favorite portuguese recipes (already tried at home)
[ameijoas à bulhão pato] 2 kg. clams (tapes
decussatus) 2 dl. olive oil 4 cloves garlic, peeled and minced 1 sprig fresh coriander (coriandrum sativum) 1 lemon (no salt!) prepare the clams in the usual way, soaking
them well in water and then washing them in several changes of water to
remove any sand. heat the olive oil. add the chopped garlic and cook until
golden brown. add the clams and finely chopped coriander and stir from time
to time. when all the clams have opened, season with salt and pepper and
sprinkle over the juice of half a lemon. serve with the rest of the lemon cut
into four pieces. serves 3 to 4. portuguese boiled dinner [cozido à portuguesa] ½ kg. flank steak (quartered) ½ kg. pork ribs (previously salted down) ¼ kg. pork hock 1 portuguese sausage 1 blood sausage ("morcela") 1 head cabbage (brassica
oleracea l. convar capitata (l.) alef. var. alba dc), cut in thick wedges 4-5 potatoes peeled, halved 4 carrots, scrubed, halved 2 cups of white rice no salt place all meats and sausages in a large stock
pot; cover with water, bring to a quick boil and simmer for about 1 hour. add
the cabbage and 5 minutes later the
carrots. after 10 minutes add the potatoes and cook for 20-25 minutes, over
medium heat. meanwhile, cook some rice. at this time the meat should be
cooked and the vegetables should be tender when pierced with a fork. cut
meat, sausages and vegetables into serving pieces and place with the potatoes
on serving dish. Serves 3 to 4. other amazing portuguese dishes waiting for
